Ingredients

For the Banana Bread:

  • 3 ripe bananas, mashed
  • 75g unsalted butter, melted
  • 100g caster sugar (reduce to 75g for a less sweet loaf)
  • 1 large free-range egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon bicarbonate of soda
  • Pinch of salt
  • 190g plain flour
  • Optional: 75g chopped walnuts or pecans, or 75g dark chocolate chips

For the Topping:

  • Arganut Almond Butter

Instructions

1. Preheat the Oven: Preheat your oven to 180°C (160°C fan)/Gas Mark 4. Grease a 900g (2lb) loaf tin or line it with baking parchment.

2. Prepare the Banana Mixture: In a large mixing bowl, mash the ripe bananas until smooth using a fork.

3. Add Wet Ingredients: Stir the melted butter into the mashed bananas until well combined.

4. Mix in Sugar, Egg, and Vanilla: Add the caster sugar, beaten egg, and vanilla extract to the banana mixture. Mix thoroughly.

5. Add Bicarbonate of Soda and Salt: Sprinkle the bicarbonate of soda and a pinch of salt over the mixture. Stir gently to incorporate.

6. Incorporate the Flour: Sift the plain flour into the bowl. Fold it into the wet mixture until just combined—be careful not to overmix.

7. Add Optional Mix-ins: If using chopped nuts or chocolate chips, fold them into the batter now.

8. Pour into Loaf Tin: Pour the batter into the prepared loaf tin, smoothing the top with a spatula.

9. Bake: Bake in the preheated oven for 50-60 minutes, or until a skewer inserted into the centre comes out clean.

10. Cool: Remove the banana bread from the oven and allow it to cool in the tin for about 10 minutes. Then, turn it out onto a wire rack to cool completely.

11. Serve with Arganut Almond Butter: Slice the cooled banana bread. Spread a generous layer of Arganut Almond Butter on each slice. For an extra indulgence, slightly warm the almond butter to create a delightful drizzle over the bread.
